You say green pepper, I say mango


Preface
Paul and I grew up saying mango instead of green pepper, something which I later decided was a linguistic idiosyncrasy of Mom's family. This evening I finally looked it up on Dictionary.com to find that it is a regional usage, Midwestern to be exact, especially in the Ohio Valley; the fact notwithstanding that I never ever heard anyone else in Ohio say anything but green pepper for green pepper. Still, kinda fun and certainly nostalgic for me, evoking Mom and Grandma Booth.


Mom's Stuffed Mangos (Trans. from Ohioan: Stuffed Green Peppers)

Ingredients:
equal parts mashed potatoes & hamburger
green peppers
salt
2 eggs

Make mashed potatoes (instant is fine); set aside. Brown hamburger and drain. Mix together with 1 or 2 eggs. Salt to taste if desired.

Halve and seed mangos. Parboil*. Drain and place in greased casserole; fill with potato/hb mixture. Use up extra mixture around peppers if nec. Bake uncovered at 350° for 30 min.

*(I'm only adding this part since Mom, in her didactic glory, included parboiling instructions in the original recipe.) Place mangos in pot of water, just covering. Bring to a boil. Remove from heat immed. and remove mangos from water; drain.


I'm not including amounts on this since Mom didn't either. Ha! Just eyeball it. :)

Very yummy after a long fall day in the fields on the farm. Most likely yummy at other times, too.

Stuffed Mangoes, eh. Hmm I will have to consult my own Ohioan. Just got back from Ohio myself and made some veggie lasagna (sans mangoes, because I forgot to buy one) in my slowcooker. Two more hours and it will be finished. Oh and I made a chocolate cake too from our fav BHG! Ahhh - if I only had this amount of time to cook every week!

I am so glad you came to visit. And I wish I would have had more time to cook better things when you were here!

P.S. there happens to now be a splatter of spaghetti sauce on my Christmas present from you and some cocoa powder... so at least you know I am using it!
