Clems*n Rice Salad

Latest cold salad creation. It would be a better representation of Clems*n colors if I had put in more red onion or some purple cabbage. And of course it would make a great BGSU Rice Salad if one subbed white or yellow onion for the red onion and put in more carrots. Go Falcons!



Mix together:
  • ~2c. cold cooked rice
  • ~1c. cold cooked lentils
  • ~1/2 c. grated carrots
  • 2 small cans white tuna
  • ~1/2 med. red onion
  • ~1/4 c. capers, drained
  • 1-2 T. olive oil
Add to taste:
  • lemon juice
  • balsamic vinegar
  • pepper
Yum.
