Latest cold salad creation. It would be a better representation of Clems*n colors if I had put in more red onion or some purple cabbage. And of course it would make a great BGSU Rice Salad if one subbed white or yellow onion for the red onion and put in more carrots. Go Falcons!
Mix together:
- ~2c. cold cooked rice
- ~1c. cold cooked lentils
- ~1/2 c. grated carrots
- 2 small cans white tuna
- ~1/2 med. red onion
- ~1/4 c. capers, drained
- 1-2 T. olive oil
Add to taste:
- lemon juice
- balsamic vinegar
- pepper
Yum.
